Systems built on top of Bitcoin, such as Lightning, often have everyone sign payments in advance just to fix how coins will move. OP_TEMPLATEHASH would let a Taproot script name that spending payment directly, cutting back-and-forth between parties and making such protocols simpler, safer and sometimes more efficient.
